The Catalan Cork Institute promotes training services aimed at wineries that want to deepen their knowledge of cork and its relationship with wine. In this context, Dr. Chantal Prat and Jose Castro, director and quality manager of the CorkLab Centre, have given three training sessions on cork aromas at the Mas Doix winery.
This pilot test was developed directly at the winery's facilities, where the team from the Institut Català del Suro moved to carry out the sessions with wines from Mas Doix itself. The initiative is part of a new specialized service that ICSuro makes available to wineries with the aim of delving deeper into the sensory analysis applied to wine and the influence of cork on the organoleptic experience.
The three sessions combined theoretical content and practical dynamics focused on training sensory memory, identifying and differentiating aromatic compounds and developing olfactory sensitivity. Participants worked on recognizing aromatic nuances and possible defects, thus reinforcing technical skills linked to tasting and quality control.
With this initiative, the Catalan Cork Institute continues to promote training and knowledge transfer actions aimed at highlighting the role of cork in oenological excellence, in line with the lines of work included in the EP Vision 2028. This new service aims to contribute to strengthening the quality, innovation and professionalization of the wine and cork sector.
