La premi\u00e8re technique d&#039;analyse OTR pour les bouchons \u00e9tait le Mocon Oxtrans (Figure 1). Cette technique \u00e9tait bas\u00e9e sur la r\u00e9gulation des r\u00e9cipients en plastique ASTM-F107-14, en mesurant l&#039;oxyg\u00e8ne qui \u00e9tait transf\u00e9r\u00e9 \u00e0 travers un goulot de bouteille scell\u00e9 \u00e0 une plaque m\u00e9tallique et en mesurant l&#039;entr\u00e9e et la sortie des gaz par des techniques barom\u00e9triques. Cette technique pr\u00e9sente plusieurs limites, car elle est destructrice, co\u00fbteuse et avec une surveillance courte.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.icsuro.com\/wp-content\/uploads\/2020\/07\/Foto-01.png\"><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter size-full wp-image-3372\" src=\"https:\/\/www.icsuro.com\/wp-content\/uploads\/2020\/07\/Foto-01.png\" alt=\"Photo 01\" width=\"483\" height=\"482\" \/><\/a><a href=\"https:\/\/www.icsuro.com\/wp-content\/uploads\/2020\/07\/Foto-06.png\"><br \/>\n<\/a><em><strong>Figure 1<\/strong>. Les deux m\u00e9thodologies sont des techniques non destructives, mais elles n\u00e9cessitent un \u00e9quipement sp\u00e9cialis\u00e9 et co\u00fbteux, ce qui rend difficile leur utilisation en tant que techniques de routine. Chimie alimentaire.\u00a0<strong>2005,\u00a0<\/strong>53, 6967-6973\u00a0<strong>6967<\/strong><\/em><\/p>\n<p>Plus tard, la m\u00e9thode manom\u00e9trique a \u00e9t\u00e9 d\u00e9velopp\u00e9e, bas\u00e9e sur le passage d&#039;air sous pression \u00e0 travers un morceau de li\u00e8ge de 3 mm (Lequin et al 2012) (figure 4). Cette technique a permis d&#039;obtenir le coefficient de diffusion de O<sub>2<\/sub>\u00a0de ce mat\u00e9riau et non de l&#039;OTR. Chimie alimentaire. 2012, 60, 3348\u22123356<\/em><\/p>\n<p>Enfin, la technique de chimiluminescence ou oxoluminescence a \u00e9t\u00e9 d\u00e9crite (Di\u00e9val\u00a0<em>et autres<\/em>l. 2011).\u00a0<strong>La chimiluminescence est une m\u00e9thode non destructive et permet de suivre un bouchon au fil des mois en mesurant directement la quantit\u00e9 d&#039;oxyg\u00e8ne \u00e0 l&#039;int\u00e9rieur du flacon.<\/strong>\u00a0(Bunner et coll., 2010). Cette technique constitue la base th\u00e9orique des appareils d&#039;oxoluminescence que l&#039;on peut trouver sur le march\u00e9.<\/p>\n<p><strong>L&#039;appareil utilis\u00e9 dans le projet GO OTR s&#039;appelle NOMASense et se compose d&#039;un appareil \u00e9lectronique avec une sonde \u00e9mettrice et r\u00e9ceptrice.<\/strong>\u00a0(Fibox 3 LCD Trace V6), qui \u00e9met un flux lumineux ou une impulsion verte. Ce flux est dirig\u00e9 vers un capteur coinc\u00e9 \u00e0 l\u2019int\u00e9rieur du r\u00e9cipient transparent (bouteille). Le capteur est constitu\u00e9 de compos\u00e9s fluorescents qui absorbent l\u2019\u00e9nergie envoy\u00e9e par la sonde et la restituent sous forme de lumi\u00e8re. La mesure repose sur le fait que la concentration en oxyg\u00e8ne dans la bouteille est inversement proportionnelle au temps de retour de cette lumi\u00e8re. Source ICSURO.<\/em><\/p>\n<p>Le NOMASense est un appareil facile \u00e0 utiliser et peu co\u00fbteux qui mesure l&#039;OTR des bouteilles pleines et vides au fil du temps (Figure 5). C\u2019est la technologie la plus proche de la r\u00e9alit\u00e9, les r\u00e9sultats obtenus peuvent donc \u00eatre extrapol\u00e9s. Ces avantages par rapport aux autres m\u00e9thodologies ont conduit les derniers articles publi\u00e9s sur l&#039;OTR \u00e0 le plafonner (Chevalier\u00a0<em>et coll.<\/em>\u00a02019).<\/p>\n<p>Dans le cadre de cette recherche, un groupe op\u00e9rationnel a \u00e9t\u00e9 cr\u00e9\u00e9 en 2017, compos\u00e9 de 4 entreprises produisant des bouchons du secteur catalan du li\u00e8ge. Deux de ces soci\u00e9t\u00e9s, J. VIGAS SA et MANUEL SERRA SA, produisent principalement des bouchons en li\u00e8ge naturel.
