Qu\u00e9 inconvenientes tiene respecto al<strong> tap\u00f3n de corcho<\/strong>?<\/p>\n<p>Seg\u00fan el estudio \u201c<a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S2214289416300199\">Influencia de packaging and aging on the red wine volatile composition and sensory atributes<\/a>\u201d los vinos BiB presentan un mayor nivel de algunos compuestos carbon\u00edlicos (propanal, hexanal, 3-metil-1-butanal, benzaldeh\u00eddo, fenil acetaldeh\u00eddo, 2-butanona, 2-pentanona, 3-penten-2-onda y furfural) en m\u00e1s de atributos sensoriales m\u00e1s bajos que los vinos envasados en botellas de vidrio tapadas con corcho natural.<\/p>\n<p>Adem\u00e1s, el estudio se\u00f1ala que algunos compuestos que se asocian a la frescura y fruta de los vinos est\u00e1n presentes a niveles m\u00e1s altos en los vinos que llevan tap\u00f3n de corcho, lo que lleva a concluir que <strong>la calidad sensorial de los vinos tapones con corcho se conserva mejor que en el caso de los vinos envasados con BiB<\/strong>.<\/p>\n<p><strong>Desarrollo del estudio<\/strong><\/p>\n<p>\u201cInfluencia de packaging and aging on red wine volatile composition and sensory attributes\u201d consisti\u00f3 en el estudio de la composici\u00f3n vol\u00e1til de las propiedades sensoriales de vinos tintos despu\u00e9s de ser envasados con los sistemas Bag in Box y con botellas de vidrio tapadas con corcho natural. El trabajo se desarroll\u00f3 durante 12 meses y los an\u00e1lisis se realizaron justo antes de que los vinos fueran envasados, a los 3 meses de almacenamiento, de 6 y de 12.<\/p>\n<p>Las tareas de determinaci\u00f3n de los compuestos vol\u00e1tiles se llevaron a cabo mediante dos t\u00e9cnicas anal\u00edticas: HS-SPME y GC-IT\/MS. Los resultados demostraron que un a\u00f1o despu\u00e9s del almacenamiento, los vinos BiB se caracterizaban por niveles m\u00e1s altos de varios compuestos carbon\u00edlicos respecto a los tapados con corcho natural y por un desarrollo prematuro.
