Taponamiento day in INNOVI


On November 9th, the ICSuro is co-organizing together with the Catalan Wine Cluster (INNOVI), a closing day with the title: IMPORTANCE OF CAPPING IN WINES AND CAVAS. OPTIMIZATION OF THE BOTTLE PROCESS

OBJECTIVE: Know the different locks on the market, their characteristics and their applications. Know the best practices for selecting and storing caps as well as the best practices in the bottling process.

TO WHOM IT IS ADDRESSED: oenologists, responsible for quality, maintenance and production.


09:00 – 09:05 Welcome and presentation of the day.

In charge of Albert Hereu, member of the Board of Directors of INNOVI and Director of the Catalan Cork Institute (ICSuro). ICSuro is coordinator of the UNE subcommittee on cork stoppers and delegate for Spain to ISO on closures.

09:05 – 10:00h Implications of closures in the Catalan wine industry.

Introduction to the cap manufacturing industry in Catalonia. Brief description of the process of making caps and socio-environmental implications of the different types of caps. Speaker: Albert Hereu, Director of ICSuro.

10:00 a.m. – 11:30 a.m What is the best cap for my wine or cava?

Type of plugging and characteristics. Selection criteria. Quality control of the taponamientos in the cellars. Storage of the caps; transport and storage of wines. Reference standards (UNE, ISO and SYSTECODE).

Speaker: Anna Oliveras, degree in chemistry and head of analytical chemistry at the ICSuro laboratory.

12:00 – 13:00h Bottling is a key process. What should be taken into account?

Good practices in the bottling process. Maintenance of the bottling machine, possible incidents in the process.

1:00 p.m. – 1:45 p.m. Case study: Influence of corking in the production of cava.

Speaker: Magda Anton, chemist and oenologist. Director of quality, production and purchases at Recaredo Mata Casanovas, SA. Member of the cork subcommittee at UNE.
