New wine longevity control service

The laboratory of Catalan Institute of Cork Foundation, the Cork Center Laboratory, presents a new service from control of the longevity of a wine in bottle aimed at the entire wine industry, tapera and alcoholic products that want to know the easily oxidizable potential or longevity of a sample of wine.

This method works by means of a rapid analysis of the tendency of the evolution of a wine to oxygen sensitivity through cyclic voltammetry, an electrochemical technique that is based on the variation of the oxidation potential and wine reduction. All the generated signals are collected in a specific voltagram for each sample with which the oxidation/reduction potential of the wine can be known and the oxidation capacity of the wine can be determined using an easily comparable index.

The ultimate goal of this new service is to provide information on the oxygenation sensitivity of a wine to help make decisions related to adjusting the sulfite content, choosing the type of cap or estimating of the potential longevity that this wine can have in the bottle.

The control of the longevity of the wine is a sample of the new range of services of the Cork Center Laboratory that will be launched soon with the aim of making our technical knowledge available to the wine sector, supporting its competitiveness and providing tools to make it easier for each winery to market the wine with the characteristics they want.
